Chilli Pesto Chicken Pasta
Ingredients

1kg Chicken breast (raw) – can also use any sort of protein source

Pasta of choice
-
3 handfuls of basil leaves
-
¼ cup pine nuts
-
juice of half a lemon
-
2 tablespoons of oil of choice (olive or coconut)
-
Sprinkle of chilli
-
Himalayan salt & cracked pepper
-
Crushed garlic
-
Brown onion
-
Spinach leaves
Method
-
Blitz all ingredients (except pasta and chicken) together until smooth

Put pasta on to cook
-
Dice up 1kg of chicken into small pieces and stir pesto mix through
-
In a wok or frying pan, add garlic and diced onion and cook until transparent

Add the pesto coated chicken and cook until golden brown
-
Once cooked, add the cooked pasta and stir through
-
Add chill, salt & pepper to taste

Mix through spinach leaves & Serve
